Roasted Eggplant
Easy to prepare
Great for all Phases
Ingredients:
- 3 medium eggplants
- 1 tbsp. olive oil
- 4 cloves roasted garlic
- juice of ½ lime
- ¼ tsp. cumin
- ¼ tsp. chili powder
- ½ tsp. salt
Directions:
Step 1. Preheat oven to 425.
Step 2. Peel and cut eggplant into 1” dice.
Step 3. Mix olive oil, garlic, lime, cumin, chili powder and salt.
Step 4. Toss eggplant with mix.
Step 5. Roast for 20-25 minutes until brown.
