Faux Breaded Eggplant
Great for all phases
Easy to prepare
- 1 eggplant
- Misto with olive oil or grapeseed oil
- 1 packet Ideal protein potato puree
- 1/2 tsp. garlic powder
- 1/2 tsp. Italian seasonings
- 2 egg whites
Step 1. Slice eggplant thin.
Step 2. Combine all dry ingredients (including soup mix).
Step 3. Dip eggplant into egg whites, then mixture
Step 4. Heat small amount of olive oil in pan.
Step 5. Gently lay eggplant slice into hot pan, and flip when turn brown, or bake on 375 until golden brown.
