Apricot Glazed Chicken and Vegetables
Good for Phases 1-4
Simple and fast to prepare
- 5 chicken skinless chicken breasts
- 1/2 c.chicken broth
- 2 tbsp. chopped parsley
- 1 tsp. grated ginger
- 2 tbsp. Walden Farms Apricot Spread
- 2 tbsp. olive oil
- 1/4 c. apple cider vinegar
- 2 tsp. curry powder
- 1 tsp. sea salt
- 1/2 tsp pepper
Step 1. Season chicken breasts with salt and pepper.
Step 2. Saute chicken in olive oil for a few minutes then drain.
Step 3. In same pan, combine broth,ginger, apricot spread and vinegar and simmer 15 minutes.
Step 4. Add chicken and vegetables and continue until chicken is cooked through.
