Asian Chicken Noodle Soup
Good for all phases
Easy to prepare
Ingredients:
- 3 tsp. grapeseed or olive oil
- 1 tsp. chopped ginger
- 3 cloves chopped garlic
- 3 c. chopped cabbage
- 3 tbsp. soy sauce
- 12 oz. rinsed and chopped kelp noodles
- 2 c. shredded chicken (cooked)
- 1 tbsp. chili sauce
- 8 c. low sodium chicken stock
- 1/4 c. cilantro
- 1/4 c. chopped green onions
Directions:
Step 1. In large pot, heat 1 tsp. oil.
Step 2. Saute ginger, garlic and cabbage for 2 minutes.
Step 3. Add remaining oil, soy sauce, kelp noodles, chicken and chili sauce.
Step 4. Stir well to coat the chicken and noodles.
Step 5. Add chicken stock, bring to boil, then lower heat and simmer 15 minutes.
Step 6. Add green onions and cilantro.
