Lite Cucumber Salad
Good for phases 1-4
- 3 cucumbers (sliced thin)
- Red onion (sliced thin)
- 1 c.vinegar
- 1-2 packet Splenda to taste (one packet is equivalent to 2 tsp sugar )
- 1/2 c.water
Step 1. Slice cucumbers into large bowl.
Step 2. Add in onions separated into individual rings.
Step 3. Mix vinegar, Splenda and water.
Step 4. Pour over vegetables.
Step 5. Season with salt and pepper to taste.
Step 6. Let sit at least 2 hours before serving.
Step 7. Refrigerate.
