Cauliflower Cous Cous
Great for all Phases
Easy to prepare
- 1 head cauliflower
- Mint to taste
- Cumin to taste
- 2 tsp. apple cider vinegar
- Salt, pepper to taste
- 3 tbs. Extra Virgin Olive Oil (EVO)
Step 1. Place cauliflower in blender/chopper and pulse until it looks like coarse grains of rice.
Step 2. Add chopped mint, cumin, vinegar, evo, and season with salt and pepper.
Eat raw or heat for 2-3 minutes in microwave, or on stove top.
