Cauliflower Salad
Easy to prepare
Great for all Phases
Ingredients:
- 3 Tbsp. lemon juice
- 1 Tbsp. Dijon mustard
- 1 Clove garlic, minced (1 tsp.)
- 2 c. Bite-sized cauliflower florets (8 oz.)
- 1 Small red bell pepper, cut into ¾-inch dice (1 cup)
- 2 Tbsp. Chopped fresh parsley
Directions:
Step 1. Whisk together lemon juice, mustard, and garlic in small bowl.
Step 2. Toss in cauliflower.
Step 3. Cover, and refrigerate 4 to 8 hours.
Step 4. Stir 1 or 2 times while marinating.
Step 5. Stir bell pepper and parsley into marinated cauliflower.
Step 6. Season with salt and pepper.
