Mediterranean Konjac Salad
Great for all phases
Ingredients:
- 1 c. Konjac noodles
- 1 c. spinach
- 1.5 c. grilled sliced zucchini
- 1 c. cherry tomatoes
- 1/2 c. thinly sliced red onion
Dressing:

- 1 tbsp. lemon juice
- 1 tsp. lemon zest
- 1 tbsp. vinegar
- 1 tsp. dried oregano
- 1/2 tsp. salt and pepper
- 5 tsp. olive oil
- Directions:
- Step 1. Whisk all ingredients together and store in refrigerator.
Step 2. Rinse and dry the noodles in skillet.
Step 3. In bowl add Konjac noodles, and veggies and toss with dressing. - Optional:
Add chicken or shrimp for a complete dinner meal.
