Crock Pot Meatballs
Good for Phases 1 – 4
Quick to prepare
- 2 lbs. lean ground beef or ground turkey
- 1/2 c. egg whites
- 1 large or 2 small jars roasted red pepper
- 2 packets Stevia or Splenda
- garlic salt or fresh garlic
- sea salt
Step 1. Mix ground beef and egg whites together.
Step 2. Form meat into small balls and pat firmly.
Step 3. In blender or Cuisinart add jars of roasted red peppers, Splenda, salt, pepper and garlic to taste, pulse until liquefied.
Step 4. Pour the mixture in the crock pot.
Step 5. Slowly add the meatballs, laying them gently into the liquid.
Step 6. Slow cook for 6 hours (or until thoroughly cooked through).
Serve on top of Cauliflower rice with mixed vegetables.
Great for appetizer for holiday season!
