Salt & Vinegar Crisps – Eggplant chips

Eggplant chips

Great for Phases 1 – 4
Simple to prepare


  • 1/2 Eggplant
  • 1 packet Ideal Protein Salt and Vinegar Crisps (pulse until crumbs)
  • egg whites
  • salt


Step 1. Slice the eggplant into 1/2″ thick slices, then cut each in half.
Step 2. Line baking sheet, spray with non stick spray.
Step 3. Place eggplant pieces on sheet, salt and bake 375 for approx. 20 min.
Step 4. Remove from oven and cool.
Step 5. Dip each piece into egg whites, then crushed IP Salt and vinegar crisps crumbs.
Step 6. Place back into oven and bake approx. 7 minutes.
