Good for phases 1 – 4
Easy to prepare
- 6 c. fresh or frozen rhubarb
- 2 tsp. cinnamon
- 3 tsp. pure vanilla extract
- 5 packets of Stevia or Splenda
- 1 dash of salt
- 1 packet Ideal Protein Maple Oatmeal
- 1 oz. of water
- olive oil spray or Misto
Step 1. Heat medium size pot on medium heat.
Step 2. Add fresh or frozen rhubarb to pot and cook until tender stirring frequently.
Step 3. Add cinnamon, vanilla, salt while cooking.
Step 4. Add Stevia or Splenda when the mixture is about done cooking and stir completely.
Step 5. Preheat oven to 400 degrees Fahrenheit.
Step 6. Spoon Rhubarb mixture into a pie dish.
Step 7. Mix 1 packet of Ideal Protein Maple Oatmeal with 1 oz of water and mix with a fork to barely wet.
Step 8. Crumble the oatmeal mixture over the rhubarb compote and spritz with spray oil so it can brown.
Step 9. Bake in the oven for 20-30 minutes until top is browned and bubbling.
Step 10. Allow to sit for about 10 minutes before eating.
Can use apples in Maintenance.
