Eggplant French Toast
Great for all Phases
- 1 eggplant
- sea salt
- 2 egg whites
- 1 tsp vanilla extract
- 1 packet Stevia or Splenda
- olive oil spray
- cinnamon (optional)
Step 1. Peel eggplant and cut into thin slices.
Step 2. Sprinkle a salt on both sides of the eggplant.
Step 3. Set aside eggplant.
Step 4. Mix egg whites, vanilla, cinnamon, and stevia in a bowl.
Step 5. Spray pan with olive oil.
Step 6. Dip eggplant pieces in egg mixture and poke holes into it with a knife or fork. This allows the mixture to permeate the eggplant.
Step 7. Cook “french toast” until golden brown, flip and do the same on the other side.
