Baked Chicken Fajitas
Great for all phases
Simple to prepare
Ingredients:
- 4-6 oz. boneless chicken breasts or tenderloins, cut in strips
- 1 red/green peppers
- 2 tomatoes, diced well
- 1 (4oz.) can green chilies
- 1 tsp. minced garlic
- 3/4 tsp. cumin
- 3/4 tsp. chili powder
- 1/2 tsp. oregano leaves
- salt/pepper, to taste
- 1/2 tsp. lime juice
- 2 tsp. grapeseed oil
Directions:
Step 1. Cut chicken and veggies.
Step 2. Mix tomatoes, chilies, lime juice, oil and all spices.
Step 3. Stir into the chicken/veggies and pour into a baking dish.
Step 4. Bake at 375 for 35 min, or until chicken is done.
