Salted Caramel Cauliflower Popcorn
Great for Phases 1 – 4
Easy to prepare
- 2 c. cauliflower florets
- 1 tbsp. Walden Farms caramel syrup
- 2 tsp. olive oil
- Salt, to taste
Step 1. Cut cauliflower florets in bite-size pieces.
Step 2. Place cauliflower in a resealable baggie; drizzle with olive oil and sprinkle lightly with salt. Shake to coat.
Step 3. Spread cauliflower on a baking sheet; spread out so pieces aren’t touching.
Step 4. Roast 20 – 25 minutes on 425, turning once during roasting. Cauliflower should be crunchy and browned on the outside, tender on the inside.
Step 5. Heat caramel syrup in microwave 15 seconds.
Step 6. Dip cauliflower popcorn into the caramel syrup.
