Cauliflower Tabbouleh Boats
Great for all Phases
Ingredients:
- 1 head cauliflower
- 2 bunches of parsley, stems removed
- 1 bunch mint, stems removed
- 1 tomato
- 2 scallions
- 1/4 c. olive oil
- 1/8 c. lemon juice
- 6 -8 endive, rinsed, stems removed
Directions:
Step 1. Chop up all ingredients (except endives).
Step 2. Slowly add cauliflower then scallions to food processor.
Step 3. Pulse until very small rice like pieces.
Step 4. Add lemon juice, mix well and put in separate bowl
Step 5. Add parsley and mint in food processor and pulse well.
Step 6. Add parsley and mint to cauliflower and mix.
Step 7. Toss in tomatoes, pour olive oil and mix.
Step 8. Place mixture into endive boats evenly.
