Vegetable Rotini
Good for all Phases
Easy to prepare
Ingredients:
- 2 packets Ideal Protein Rotini (plain or Tomato Basil)
- 1 small can Stewed Tomatoes (Sugarless)
- 1/2 c. sliced Mushrooms
- 1/4 c. diced Onions
- 1 tbsp. chopped fresh Basil
- a small bunch Fresh Spinach leaves
- Sea salt and Pepper to taste.
- 1 tbsp. olive oil
Directions:
Step 1. Cook Rotini for 8-10 miuntes.
Step 2. In small skillet heat olive oil on medium heat.
Step 3. Add mushrooms, and spinach leaves, cook and stir until mushrooms and spinach are tender,.
Step 4. Add stewed tomatoes and basil simmer for 5-10 minutes.
Step 5. Drain and add Pasta and onions, pan toss to coat.
