Vegetable Kugel
Good for phases 1 through 4
Easy to prepare
Ingredients:
- 1 Ideal Protein Potato Puree
- 2 zucchini
- 1 rutabaga
- 1 onion
- 3 garlic cloves
- 1 tbsp. fresh parsley
- 3 eggs, beaten
- 1 packet Stevia or Splenda
- salt and pepper to taste
- 4 tbsp. olive oil
Directions:
Step 1. Preheat oven to 350 degrees.
Step 2. Spray dish with olive oil.
Step 3. In a food processor, coarsely grate zucchini, rutabaga, onion and chop garlic and parsley.
Step 4. In a bowl, combine the grated vegetables and herbs with the remaining ingredients.
Step 5. Pour the vegetable mixture into the greased casserole dish. Bake for 45-60 minutes, or until the vegetables are tender and the top of the kugel is brown.
