Fish Mediterranean style
Great for Phases 1 – 4
Simple 3 step process
- 4 oz. white fish such as flounder
- 12 oz. water
- 20 thin slices eggplant, raw
- 4 c. eggplant, cooked (saute in pan until brown)
- 1 c. leeks
- 2 c. tomato, cubed
- 8 tbsp. chives
- 4 tbsp. Dijon mustard
- 4 tbsp. capers
- sea salt & pepper, to taste
Step 1. Add a little olive oil to hot pan and sear fish.
Step 2. Add slices of eggplant and 1/2 water to pan and let simmer. (be careful to add water very slowly)
Step 3. When the fish is well seared (thoroughly cooked), add in the leeks, cooked eggplant, tomatoes.
