Fish – Mediterranean Style Fish

Fish Mediterranean style

Great for all Phases
Simple 3 step process

Ingredients:

  • 4 oz. white fish  such as flounder
  • 12 oz. water
  • 20 thin slices eggplant, raw
  • 4 c. eggplant, cooked (saute in pan until brown)
  • 1 c. leeks
  • 2 c. tomato, cubed
  • 8 tbsp. chives
  • 4 tbsp. Dijon mustard
  • 4 tbsp. capers
  • sea salt & pepper, to taste

Directions:
Step 1. Add a little olive oil to hot pan and sear fish.
Step 2. Add slices of eggplant and 1/2 water to pan and let simmer. (be careful to add water very slowly)
Step 3. When the fish is well seared (thoroughly cooked), add in the leeks, cooked eggplant, tomatoes.
