Cauliflower (or Broccoli) Hummus
Great for Phase 1 – 3
Easy to prepare
- 1 head cauliflower or broccoli
- 1/4 c. olive oil
- 2 tsp. cumin
- 1/4 tsp. sea salt
- 1 tbsp. minced garlic
- 1 tsp. paprika
- 2 tbsp. lemon juice
Step 1. Chop cauliflower or broccoli into medium sized florets.
Step 2. Toss all cauliflower/broccoli in bowl with 2 tbsp. olive oil, paprika, cumin and salt.
Step 3. Spray baking sheet with non stick spray.
Step 4. Lay out the florets on baking sheet.
Step 5. Bake on 350 for approx. 30 minutes to soften.
Step 6. When baked, place florets in food processor and add 2 tbsp. olive oil, lemon juice and garlic, and blend until smooth.
Dip veggies into hummus
Serve with Garlic crisps
