Frittata
Great for all Phases
Easy to prepare
Ingredients:
- 2 tsp. olive oil
- 2 c. diced phase 1 vegetables
- 1 c. fresh spinach
- 6 eggs
- salt and pepper to taste
Directions:
Step 1. Roast diced vegetables.
Step 2. In skillet, heat olive oil.
Step 3. Add roasted vegetables and some spinach (save some for end)
Step 4. Whisk eggs and pour over vegetables.
Step 5. Place lid on pan, lower heat and cook until eggs are done.
Step 6. Add fresh spinach, salt and pepper on top.
