Chicken Kale Soup
Great for all phases
Easy to prepare
- 12 oz. boneless chicken cut into bite size pieces
- 2 tbsp. olive oil
- 1 tsp. soy sauce
- 4 cups chicken broth (sugar free)
- 1 bunch kale leaves, chopped
- 1/4 tsp. chili sauce
- 1/4 tsp. onion salt
- salt and pepper to taste
Step 1. Heat oil in medium stock pot.
Step 2. Add chicken pieces and cook until brown on outside
Step 3. Add soy sauce, and spices, stir.
Step 4. Add chicken broth, and bring to boil, reduce heat and let simmer
approx. 25 minutes.
Step 5. Add Kale leaves and cook 5 minutes, until Kale is tender.
Add 1 c. cauliflower rice
