Great for Phases 1 – 4
Easy to prepare
- 1 bag spinach (approx. 9 oz)
- 2 c. cauliflower cream (see recipe here) or below
- 1/2 tsp. olive oil
- 1/2 tbsp peeled shallots
- 1 tsp. garlic minced
- 1/4 tsp. sea salt
- 1/4 tsp. pepper
Step 1. Heat oil in pan, add shallots, garlic and salt until brown.
Step 2. Add cauliflower cream, pepper, stir until begins to bubble
Step 3. Add spinach and stir until “wilted”
- 1 head cauliflower cut
- 12 c. water
- 1/4 c. lemon juice
- 2 tsp. sea salt
Step 1. Boil water, lemon juice and 1 tsp.salt.
Step 2. Add cauliflower and simmer for 20-25 min.
Step 3. Drain cauliflower.
Step 4. Puree cauliflower and 1 tsp. of salt in batches until smooth.
