Great for Phases 1 – 4
Easy to prepare
- 1 packet Ideal Protein potato puree mix
- 1 packet Ideal Protein crispy cereal mix
- 1 c. zucchini (shredded)
- 2 tsp. baking powder
- ½ tsp. garlic powder
- pinch of salt
- 1/3 c. liquid egg whites
- 1/4 c. (2 oz.) skim milk
- 1 tsp. olive oil
- ½ c. shredded zucchini
Step 1. Crush Crispy Cereal.
Step 2. Preheat oven to 350 degrees.
Step 3. Place shredded zucchini in a small bowl ,microwave 1 minute.
Step 4. Remove excess water.
Step 5. Stir together dry ingredients.
Step 6. Stir in rest of ingredients (except zucchini),
Step 7. Add zucchini to mix and fold well.
Step 8. Scoop batter into a sprayed regular sized donut pan making approx. 4 bagels.
Step 9. Bake approx. 12-14 minutes or until inserted toothpick comes clean.
Servings: Makes 4 bagels (muffins) = 2 unrestricted proteins
