Beef Zucchini Lasagna
Great for Phases 1 – 4
Easy to prepare
- 8 oz. ground beef
- 1-2 c. zucchini sliced thin long side
- 10 oz. can diced tomatoes
- 1/4 tsp. garlic powder
- 1/4 tsp. Italian seasoning
- 4 eggs
- 1/3 c. egg whites
- salt and pepper
Step 1. Brown ground beef, season with salt.
Step 2. In blender, combine garlic powder, italian seasoning, pepper and diced tomatoes. Blend well.
Step 3. Beat eggs and egg whites, and set aside.
Step 4. Spray bottom of pyrex dish and layer zucchini to cover bottom.
Step 5. Layer meat and spread evenly over zucchini.
Step 6. Pour tomato mixture.
Step 7. Pour 1/2 egg mixture.
Step 8. Repeat layers with remaining ingredients.
Step 9. Bake on 350 for approx. 35-40 min.
