Easy to prepare
- 1 eggplant
- 1 packet Ideal Protein Jalapeno Cheddar Crisps
- 2 tsp. olive oil
- salt and pepper
Step 1. Dice eggplant, season with salt and pepper, place in plastic bag.
Step 2. Add olive oil to coat, let marinate over night.
Step 3. Crush bag of IP Jalapeno Cheddar Crisps
Step 4. Add 3/4 of cheese curls to eggplant, and shake bag.
Step 5. Spray baking dish with non stick spray, and add mixture.
Step 6. Sprinkle remaining curls on top.
Step 7. Bake 350 for 30 minutes, mix, and bake 30 more minutes.
