Easy to prepare
- 4 c. Chayote squash (or Jicama)
- 1 tsp. Cinnamon
- 2 Lemons
- 2 packets Stevia or Splenda
- 3 tbsp. of Walden Farms Apple Butter
- 1 packet Ideal Protein Apple & Cinnamon Soy Puffs
Step 1. Peel Chayote or Jicama.
Step 2. Slice Chayote or Jicama into 1/4 inch pieces.
Step 3. Place Chayote or Jicama slices in a large bowl.
Step 4. In another bowl combine fresh squeezed lemon, cinnamon, and Splenda.
Step 5. Soften the Walden Farms Apple Butter in the microwave for a short amount of time and add to these ingredients.
Step 6. Add the liquid ingredients to the Chayote or Jicama and mix very well.
Step 7. Place mixture in a pie pan.
Step 8. Crush a packet of Ideal Protein Apple and Cinnamon Soy Puffs. Spread this out as top layer of the “pie”.
Step 9. Bake, uncovered for 30 to 45 minutes at 350. Check to be sure the pie does not burn.
