Apple Pie
Good for Phases 1-3
Easy to make
Ingredients:
- 4 c. jicama or chayote
- 1 tsp. cinnamon
- 2 lemons
- 2 packets Stevia or Splenda
- 3 tbsp.Walden Farms Apple Butter
- 1 packet IP Apple & Cinnamon Soy Puffs
Directions:
Step 1. Peel jicama, or chayote.
Step 2. Slice jicama or chayote into 1/4 inch pieces.
Step 3. Place the jicama or chayote slices in a large bowl.
Step 4. In another bowl combine fresh squeezed lemon, cinnamon, and Splenda.
Step 5. Soften the Walden Farms Apple Butter in the microwave for a short amount of time and add to these ingredients.
Step 6. Add the liquid ingredients to the jicama or chayote and mix very well.
Step 7. Place mixture in a pie pan.
Step 8. Crush a packet of Ideal Protein Apple & Cinnamon Soy Puffs. Spread this out as top layer of the “pie”.
Step 9. Bake, uncovered for 30 to 45 minutes at 350. Check to be sure the pie does not burn.
